Lemon Cake Batter Blondies

The title really says it all.  And I shouldn’t publish this yet, but I’m going to ANYWAY, so if you are reading this and going to the same barbeque (barbecue) (oddly windows live writer doesn’t have a problem with barbeque but I LOST a spelling bee on that word so I know it’s barbecue) (or bbq) (squiggly red underline) then the surprise is spoiled.  If you are going to the same barbecue likely you’ve had regular cake batter blondies before, since I like to make those on occasion.

This morning Jen and I were going to run 11 miles, that’s two loops around the Park.  I did a lot of things right—I ate well the night before, I got plenty of sleep, and I woke up with a bit of a sore throat.  Allergies…I hope (I really don’t want to be sick right now)…and it killed the run.  After about 7 miles I was in serious trouble (I am such a lousy running partner, I’m sorry Jen!) and Jen pointed out I had been breathing really loudly the whole way, and she was pretty concerned about my ability to finish the run.  So we made an executive decision to turn around.  8.6 miles rather than 11, with some walking…even when walking I was having a lot of trouble breathing.  Ugh.  3 weeks until the half, this does not bode well for a PR.

So I came home and decided to bake.  I didn’t want to go to the store though, unless I had to, so I had to mix up my recipe a bit.  I had lemon cake on hand…and I thought lemon cake would be amazing.   It is.

Lemon Cake Batter Blondies (adapted from Girl Meets Life)

1 box lemon cake mix

1/4 cup vegetable oil

1 egg

1/4 to 1/2 cup milk (start with less, then add more if needed)

1/2 cup white chocolate chips

Mix together, add to greased pan, bake for 30 minutes at 350.  Try not to eat them all at once.

Yeah, that’s it.  Delicious!  I’ve eaten just one or two, depending on how you want to count it.  Might be three soon, but then I promise I will bring them over to my friend’s house.  Nobody wants to write "entire pan of blondies" into a food diary, not even me.

I also spent over an hour on my taxes, something I’d been dreading.  It wasn’t so bad—I’ve got all my research done and now I’m ready to input into the program.  I’ll do that another day (tomorrow…?).  I also did laundry and I’ve been chugging water and G2 like there’s no tomorrow (the way my throat/head feels there might not be).  Technically now it should be practice time but I may just need another day off from the violin.  I leave for SC in one week, but showing up injured isn’t going to help me play better.

Now I’m going to go back and insert random pictures into the post.  Keep that in mind.

Chocolate Covered Almonds

It’s that time of month again…"Foodie Pen Pals" time!  I didn’t participate in January, so February was my first month back.  I actually got paired with a dud this month.  I sent my stuff to the lovely Crissy from near Las Vegas, who doesn’t have a blog.  I didn’t receive anything from the person I was supposed to, but Lindsay took pity on me and sent something my way!

All kinds of good stuff, including the blog-world-famous chia seeds, granola, almond butter, and in the plastic bag…chocolate covered almonds.  Those are gone.  WAY gone.

Thanks Lindsay!  I was thrilled to get this package!!

Wanna be part of foodie pen pals next month?  Here are the rules:

Eating "perfectly"

I’m not sure how it has happened, but I realized that I currently like ALL of my students!  As in they are all delightful human beings who are genuinely fun to work with.  I feel like this is different than in the past, unless I am the difference…maybe I’m just a better teacher or perhaps in my old age I have gotten better at figuring out how to work with various personalities better.  No matter the reason, it helps the teaching days go by easy! 

Today in my workout Mike brought up the fact that I wanted to lose my honeymoon/holiday weight.  He asked how that was going (I suppose he can tell I’ve gained a few pounds…and he doesn’t even know that I’ve just been wearing leggings or ONE pair of jeans since I got back!).  Sadly it hasn’t been going as well as I’d hoped.  There are a couple of issues I’ve been having.  I feel like I’ve gotten my diet more under control, but it’s not ideal yet.  I haven’t been running as much as I’d like, because I’ve been having trouble getting back into my running routine.  I’ve been cautious since I’ve had some hip/ankle pain, which is probably because I’m out of shape and carrying a little extra weight…which is part of why I’m out of shape and carrying a little extra weight.  I just have to keep at it, run a bit more, maybe do some other cardio if running is a problem, and make sure to pile on the vegetables, cut down on the carbs, and keep the protein leaner!  I think I’ve lost approximately 1 pound since I started weighing myself (I waited over a week after getting home before stepping on the scale.)

Mike suggested I try to really eat "perfectly" for 5 or 6 days in a row.  That’s tough right now, because Sunday we are invited to a potluck dinner and Monday night we are going out for Valentine’s, both occasions that I prefer not to eat "perfectly."  I can probably give it a go starting the following day though!  I can easily think of ways I’ve added on calories in my meals that weren’t necessary, so I can definitely cut those things out (less cheese, less mayo, less cream in my coffee, that sort of thing) between now and Sunday too.  And if you are wondering, yes, I have something in my mind that constitutes eating perfectly, and it may be different than what Mike thinks, but it’s how I initially lost weight a couple of years ago.  Basically it involves tons of veggies, a serving of lean protein, and a serving of whole grain carbs at each meal. 

Okay, enough about my diet.  Now for my exercise 😉

I have something happening this weekend that I haven’t done before:  TWO races!  Saturday is a 3.5 mile trail race that I signed up for since I thought I’d want a little trail race experience before the Castlewood Cup at the end of the month.  But then a friend asked if I wanted to run a 5k downtown, called Run for the Chocolate (chocolate, sadly, does not fit in with eating "perfectly") on Sunday, and I figured, why not.  So that’s my weekend!  Two races followed by a potluck.  I’m not expecting to PR in the 5k, but I’ll give it my all!

Oh, and I still owe you at least one blog post about our honeymoon (who am I kidding, you know it’ll be a couple!)  Since the wedding, I haven’t taken many pictures, including not that many on our honeymoon…I think I felt that since I had just had a day DEVOTED to pictures of me (and Chris, of course) I was tired of pictures.  Plus I feel like my pictures are just so terrible in comparison to Sarah Crowder‘s, why even bother?  I know I’ll be back into the photo taking mood soon (probably even this weekend), but that is why I haven’t shown you any recent photos.  The last time I uploaded photos from my camera was the day we returned from our honeymoon.

So…are any readers racing this weekend?  Will I see you anywhere?  I’ll be the one squeezed into my running tights 😉

The chocolate is awesome, and the nut mix is delicious plain or on salad.  I had some of the hazelnut spread on wheat bread, which was a little weird, but not bad.  Probably would be better on plain or maybe pumpkin spice bread….

What I’ve learned

Don’t get married right after the holidays unless you are okay with being a few pounds heavier than the previous month.  Or if you have better will power than me…which is possible, but unlikely. 

I’m okay with it half the time (the time I continue to eat) and the other half of the time I’m beating myself up.  I realized today that I’m now at a point where things are how they will be on Monday, and I THINK I’m okay with that.  For instance, I may weight three more pounds than I did pre-Thanksgiving.  I can still wear all my clothes, so that’s not a problem.  I never was able to quit biting my fingers and fingernails.  Did I try?  Not terribly hard, but nonetheless, my fingers are going to be gross for my wedding day.  Oh well.  I still have faint sports bra tanlines too, and I tried to get rid of those.  At least my skin (especially my face!) looks awesome, my hair is shiny and healthy, and my arms have never been more muscular.  Sure, a few less pounds would have made them look better, but I think it’ll do. 

So do I fast for the next three days, or plan menus which involve mac and cheese and wine?  I think we all know the answer.  We’ll just say I’ve purchased the ingredients to serve mac and cheese on New Year’s Eve, and tonight will definitely involve at least one glass of wine. 

I have been continuing to kick my butt (and get my butt kicked) at the gym and running outside (thank goodness for lovely weather), and I’m still making every effort to eat lots of fruits and vegetables.  I’m just not quite able to kick my cookie habit.  I think that’ll just have to wait until we return home from the cruise, and then the pressure will be off, and I’ll have plenty of time to just relax and get back to my weight goals.  (By relax I mean teach ridiculous amounts of children, but I think you get the point—no wedding to plan, no wedding pressure).

Greatest meal ever?

Last night Chris and I went to Niche for dinner.  Since we aren’t exchanging gifts this year we wanted to treat ourselves to a nice dinner instead.  We had gone one time before—on Chris’s 30th birthday and it had been fantastic, so we were really looking forward to our dinner.

We decided to splurge and try the Chef’s tasting menu.  Our friends had been the week before to celebrate a birthday, and they highly recommended it.  If you want to do the tasting menu, they ask that all members of the party do so, though if you have dietary restrictions they are happy to accommodate.

We decided against the wine pairing—neither Chris nor I like white wines, and I don’t care for dessert wines or port either, so it didn’t seem like the best idea.  We saw other diners doing the pairing, and I’m sure it’s great if you are open to all different kinds of wine.

I was not quite ready for this picture.  However, we noticed that people were giving us funny looks so we stopped taking pictures—Chris was embarrassed. 

So, I turned off the flash for the food pictures—I didn’t want people to stare and make Chris feel uncomfortable.  Yet, the food was so beautiful I wanted to take pictures!

Lobster:  Possibly the greatest thing I’ve ever eaten.  Our friends raved about this one as well.  Laura:  I need you to recreate this at home and invite us over.  Seriously.  THIS is what I am thinking about today.

All in all it was a fantastic meal!  We will return in a few years, or who knows, maybe next year for our first anniversary?

After dinner we decided to drive over to Frazer’s to cap off the evening and meet up with a friend.  My trainer Mike works there (as a server, not a trainer) and we were able to chat with him as well.  It was a fun evening!

Chris kept commenting on how shiny I was.  I guess the dress is pretty shiny, and the earrings too.  Whatever, it’s the holidays!  I’m supposed to shine, right?

I was thinking about how last night’s meal fit into my top restaurant meals ever.  Other top meals:  Capital City Club restaurant when I was in high school (I think that’s what it was called—it was my first fancy restaurant meal ever and I still dream about the caesar salad), Lola in Cleveland, and well, perhaps, our first time at Niche!  Chris wanted to add the steak house "Craft Steakhouse" that he went to this summer in Vegas with his friends as one of his top favorites.
