The Immortal Life of Henrietta Lacks

Last year when the book was coming out, I heard several interviews on NPR with Rebecca Skloot and thought it sounded like a really interesting read.  But I generally read fiction…even though some of my favorite books have been non-fiction!  I finally got around to reading this book…and it was fantastic.  If you haven’t read it, I highly recommend you do so as soon as possible.  I spent several hours yesterday (during the super bowl…) reading the book, and I just couldn’t put it down.  It’s both well written and a fascinating subject matter.

And no, I did not watch the super bowl.  I decided to spend the evening relaxing and resting up, and of course finishing my book.  Now I’ve moved on to Alice’s Adventures in Wonderland, which I realized is a very short book.  The one thing about the Kindle is that you don’t know how many pages a book is!  Once you get started it tells you what percentage you have read, so it’s easy to tell after a short time whether it is a long or short book, but you don’t know until you start. 

Blue Cheese-Stuffed Chicken

Last night’s dinner…it was delicious!  I should have taken a picture, but I was too eager to get started eating it.  And the recipe is from Cooking Light, so it’s not too bad for you.  I’m not sure about the sauce—it was tasty, but I don’t think I made it exactly right.  Oh well!  In any case, I highly recommend you try this recipe.

 

Blue Cheese-Stuffed Chicken from Cooking Light Magazine

Resist the urge to turn the chicken before it’s time; otherwise you risk having the breading stick to the pan (mistake #12).

Yield: 4 servings (serving size: 1 breast half and about 4 teaspoons sauce)

Ingredients

  • 1/2  cup  (2 ounces) crumbled blue cheese
  • 1  tablespoon  reduced-fat sour cream
  • 1  teaspoon  fresh lemon juice
  • 1/8  teaspoon  freshly ground black pepper
  • 4  (6-ounce) skinless, boneless chicken breast halves
  • 1/4  cup  all-purpose flour
  • 2  tablespoons  2% reduced-fat milk
  • 1  large egg, lightly beaten
  • 1  cup  panko (Japanese breadcrumbs)
  • 1 1/2  tablespoons  butter, divided
  • 6  tablespoons  finely chopped drained bottled roasted red bell peppers
  • 2  teaspoons  water
  • 1  teaspoon  Worcestershire sauce
  • 1  teaspoon  minced fresh garlic
  • 1/2  teaspoon  hot sauce

Preparation

1. Preheat oven to 350°.

2. Combine first 4 ingredients in a small bowl. Cut a horizontal slit through thickest portion of each chicken breast half to form a pocket. Stuff cheese mixture evenly into pockets.

3. Place flour in a shallow dish. Combine milk and egg in a shallow dish, stirring well with a whisk. Place panko in a shallow dish. Working with 1 chicken breast half at a time, dredge chicken in flour, then dip in egg mixture; dredge in panko. Repeat procedure with remaining chicken, flour, egg mixture, and panko.

4. Heat a large ovenproof skillet over medium-high heat. Add 1 tablespoon butter to pan; swirl until butter melts. Arrange chicken in pan; cook 4 minutes or until browned. Turn chicken over; place skillet in oven. Bake at 350° for 20 minutes or until done.

5. While chicken bakes, combine remaining 1 1/2 teaspoons butter, bell peppers, water, Worcestershire, and garlic in a small saucepan over medium heat. Bring to a simmer; cook until butter melts. Remove from heat, and stir in hot sauce. Serve sauce with chicken.

BLIZZARD!

I woke up today to several inches of snow.  In fact, some might argue this was the snow we did NOT get during last week’s “blizzard”.

It’s a subtle different but I believe you can tell that last night was a bit more snow.  Also the cars across the street are a little more snow-covered.  However, cleaning off my car from the first picture was much more challenging as it was primarily ice.  Today’s snow came off very easily.

I had to go out in the snow this morning to meet “Mike” at the gym.  I was a little worried I wouldn’t be able to get my car out of the space (they NEVER plow my street…never, never, NEVER) but managed.  I much prefer driving in the snow to driving on ice, so I didn’t mind driving.  Luckily they had plowed some of the bigger roads, and I didn’t have to go on the highway—I much prefer staying slow on surface streets when the roads are bed.  I suppose most people do?

In any case, I had a great Friday night.  I was feeling pretty grumpy yesterday afternoon, but after my grumpy pants blog entry, I remembered I had an emergency chocolate stash.  Two pieces later and I felt MUCH better.  I’m such a girl. 

I attended the Symphony concert (Mahler 6) which was great!  The review was good also.  Afterwards Chris and I went to Robust Wine Bar with a few good friends and had a great time drinking wine, eating cheese, and having fabulous conversations.  I feel MUCH better today, especially after a great workout with Mike.  (I did a bunch of planks and side planks, along with some other torturous exercises.) 

I guess the moral of the story is that a little chocolate and hanging out with a few friends makes me feel better?  I can’t believe it’s only Saturday—it feels like a Sunday!  I still have another day before I am back to work.  I am planning to cook a fancy dinner tonight.  I’ll let you know how it turns out.  I even decided to purchase a cast iron skillet for it (it calls for a pan you can put in the oven after being on the stovetop and I wasn’t sure mine were okay for that—I likely could have transferred to a baking sheet, but thought I might as well get a cast iron skillet—there will be more uses for it).

Summer?

It seems like lately a lot of people have been asking what my summer plans are.  I know they are being friendly, and perhaps they are daydreaming about summer due to the cold weather.  But seriously, it’s stressing me out!  I don’t KNOW what my summer plans are…because as usual, I don’t know what my fall plans are.  So if I am not certain (I know nothing is really certain, but I always feel that my life is more temporary than many of our friends) what my fall plans are, I can’t know my summer plans…can I?

I do know that I want Chris and I to take a fun vacation somewhere.  Just not sure what the budget will be.  And probably in July.  I am very interested in a cruise to Alaska, but I would also love somewhere beach-y and tropical. As much as I love cruising, I don’t have to cruise every summer.

I also know I want to go somewhere for a teaching training workshop.  I’m leaning towards Kansas again because of price, location, and quality. 

I know I will play a lot of weddings.  And I want to add a day of teaching at home after school lets out. 

But seriously people, let’s not add to my stress levels!  (Yes, I’m nearly always stressed.  I really just need to come to terms with the fact that stress is a genetic problem.)

(Someday I should write a blog post compared my own life to Natalie Portman’s in Black Swan.  No, I’m not crazy, but I do occasionally pick at /chew my cuticles.  Practically the same, right?  And my constant striving for perfection in my life…and failing…and going crazy and killing people?)

Reminiscing about last summer…when it was hot…and there was much less snow on the ground.

Grumpy pants

I feel like I just had a weekend…I’m tired of the snow, I’m tired of sitting around the house, I’m tired of going to concerts.  WAAAH!

But here we are, ready for the weekend again…tonight I’m GOING to see Mahler 6 and then out with friends.   We’re going out with two other couples and it should be fun.  Saturday I have a workout with Mike (again, yay!) and Sunday is spinning class and (hopefully) a long run.  What else to do?  Anybody want to hang out?  I need to get out of the house more!

Good news is that Chris is rotated out (for now, unless somebody gets sick) of next week’s concerts—which means we made a reservation for dinner next Saturday night.  Granted, said reservation is at 8:30 pm, but still, I’m excited to have an official Valentine’s Day dinner.  (Yes, I know Valentine’s is on Monday, but I have to work all day Sad smile )  Hopefully Chris won’t get called in, but if he does, maybe we’ll get takeout dinner and eat later then?  I’ll worry about that later.

It’s funny—I generally love being at home relaxing, but not for an entire week!  What is the saying, be careful what you wish for because you might get it?  I should savor this time though, because the rest of the month is going to be busier (unless there is another huge storm, haha!), what with regular teaching, opera, and one weekend taken up with the Mark O’Connor workshop (though the rumor is that it might get canceled due to low enrollment, boo!). 

I’m also excited about the race next weekend—5 miles.  I haven’t run that distance before in a race.  It would be AWESOME to break 1 hour, but I’m not counting on it.  I AM hoping to win though!   I am also hoping I can run the whole way, just walking through the water stations.  That’s my real goal, not the time.

Did you win?

Today one of my students noticed a picture I have on the mantel of myself running in a race (the Lewis and Clark).  He asked, “Oh, did you run in a race?”

I said, yes, I ran in a half-marathon in the fall.

He thought about that for a bit, and then asked “Did you win?”

When I told him, no, I didn’t…he looked disappointed. 

He asked what place I finished.  I told him I didn’t remember, that there were over 5000 people, that I was somewhere in the middle, maybe close to 3000th (I don’t remember!).  I think I blew his mind.

But I loved it:  “Did you win?”  No one else has asked me that!
