Meat Day

All in all it was a great weekend.  (Yes, I know it’s already Monday night.  Sue me.)

Friday night: I had a school concert followed by carbo-loading at Trattoria Marcella (WOW, delicious!).  I had been invited to go out with some friends, but the concert ran late and Chris and I decided to have some couple time.  Occasionally we like to hang out just the two of us.

Saturday:  The morning was the Benton Park 5k I’d been planning for awhile.  We had a blast!  I have since decided that I look BEST dressed in 80’s clothing, and I am considering making that the theme of my wedding.  What do you think?  The afternoon was for relaxing, and the evening was a farewell party for a colleague of Chris’s—they weren’t leaving St Louis, just the job.  I made cake batter blondies.  I will make them again.

Sunday:  First a run with Jen, then a wedding at the Jewel Box, then Meat Day.  Meat Day was my friend Kyle’s brainchild—a celebration of all kinds of meat.  He loves grilling.  (That is actually the understatement of the year.)

I had a burger.  But my friend Jon set a record for the most amount of burger consumed.  1.4 lbs precooked.  Oh, and Lucian is a baby and Buck is a puppy.  And I also had a bite of that pork tenderloin.

Cake batter blondies

I was feeling like baking tonight, so I went with it.  I made “cake batter blondies” from this website.

Mine aren’t much to look at, but they are pretty tasty!  And super easy.

If you read the comments on the original website, people get very angry about the “short cut” of using “cake mix.”  If you know me, you know I don’t shy away from baking from scratch (except when it comes to pie crusts, though I did my best last Thanksgiving…pie crusts seriously give me a nervous breakdown, which is especially weird since I generally have cold hands that can’t even make my stupid touchscreen phone work properly).  (Other baking posts: here and here, and for my “famous” pumpkin bread, HERE)

But occasionally you don’t WANT to lift the horrendously heavy kitchenaid mixer down from the fridge top—perhaps you are feeling lazy, or still nervous about how the crockpot broke, or perhaps your arms are just simply TOO tired.  Or it might be that you are feeling lazy, and want a recipe that uses one bowl, one spoon, and one measuring cup, and THAT’S it.

I love you kitchenaid mixer!  I would marry you if that were legal.

Now, the recipe makes for a pretty sweet treat.  If you prefer your desserts less sweet, have a salad or something (or maybe that buttermilk cake I linked to).  If you want an easy, tasty, sweet something, then try these blondies.

Just don’t get all mad about it.  Besides, some of us girls spend some of our time outside of the kitchen too.  (But we don’t do math, math is seriously hard.)

Again I am blown away by how many folks are reading my Auditions post.  Thanks for reading!  Some of you have left comments.  I’d love to hear from more of you!  Feel free to comment, don’t be shy…after all, one commenter claims all musicians are unknowingly “dead inside.”  You can’t really top that, now can you?  (This is not a challenge, actually.  Just saying, maybe YOU have something you want to say.  Unless you are actually dead on the inside?)

I was a fabulous (read: bribing) teacher today and brought candy for my students.  (Sorry to their regular classroom teachers.) I find that people fall vehemently into the “love peeps” or the “hate peeps” categories.  Where do you stand?  I’m ashamed to admit I could probably eat large quantities of them in one sitting if I didn’t watch myself.

So good!  Those I could probably eat for days on end.  I did actually purchase TWO today at the store.  One for me, one for Chris.  Aren’t we ridiculous in our “moderation”?  I WANTED to get the six-pack (I wanted to get several six-packs of them, or perhaps the gigantic one I saw) but I thought one each was enough.  Joe would be so proud.

Now, TODAY was a great day for a run.  Just around 50 degrees, and sunny.  I started out cool, but was sweaty by the end. (I am still comparing all running days to that ridiculously hot day I ran my last half marathon Sad smile )

I hope you are all enjoying this beautiful Wednesday…after the storms we had last night, it’s a welcome relief.  Let me be clichéd and ask, what is YOUR favorite Easter candy?

Where are your doughnuts?

I usually do the weekly shopping on Tuesday after I meet with Mike at the gym.  Today was no exception.  Usually I get a mix of fruits/vegetables, meats/fishes, breads and rice, some milk, cheese, coffee, etc.  I’ve been trying to do better using up the stuff I freeze and the cabinet stuff, so today I mainly just got fruits/vegetables, some pork for a planned menu dish, coffee and some deli meat/cheese.  As I was unloading my stuff onto the conveyer the woman in front of me says, “Wow, I should have you shop for me with all that healthy stuff!” and the cashier says “Where are your doughnuts?”  I laughed, knowingly.  After all, the doughnuts are at the restaurants!  The healthy food is at home.

Keep in mind, this came after a week where I think I have actually gained three pounds…it’s amazing how in the morning before you PR on a half marathon you can be bothered that you weigh more.  After all, I wanted to lose weight this month, not gain…even if it is just a couple of pounds…even if you “carb-loaded” the night before.  THEN Mike tells me he is trying to “cut 10 pounds” for the half marathon so he will be very grouchy the next two weeks.  Of course…10 pounds in two weeks, that’s healthy right?  I suppose we have different half marathon goals—his is 1 1/2 hours (probably secretly less) whereas mine is 2 1/2 hours, and I can’t run as well if I am starving myself.  But that certainly made me more likely to buy a ton of vegetables at the store! 

So there I am in my gym clothes at the store, as usual…and I’m loading up on broccolini (is that even a real vegetable?), broccoli, spinach, carrots, etc.  And thinking how if MIKE can lose 10 pounds in two weeks, surely I should be able to lose a few pounds and fit into that pair of jeans in the bottom of my drawer that I am continually ALMOST able to button (and somehow still run 11 minute miles for the half on April 9), and my cart is SO full of healthy foods that the cashier actually comments on it…then I suppose I am doing something right…right?  And the scale is just a number, and certainly shouldn’t be the thing that makes me decide whether I feel good about myself or not.

So I get home and make a large salad with a delicious new honey mustard dressing I’m trying out, and tell myself that the only snack I am allowed between now and dinner is a fruit…and we’ll just have to see how that goes.  I followed a very strict diet from January through November of last year, and since November I have gained approximately 3 pounds, which is actually pretty great (especially since I am in much better shape overall) but now it is so hard to follow a strict diet because I just don’t have as much incentive.  After all, most of my wardrobe fits and looks great, I can do a ton of workouts, I can run 4 to 5 days a week…I’ve run 92 miles this month (1 more to go to meet the goal!)…and honestly I’d rather be a little stronger than thinner…I guess I am still convinced that everybody is looking at my fat and judging me.  (Do people ever do that?  Am I alone in this fear?)

This is what I need to do to beat 2:30 in the half marathon.  I want to shoot for 11 minute miles.  If it’s not too hot, if I don’t get cramps or side stitches, and if I don’t have to stop to use the bathroom, I know I can do it.

I can’t remember the last time I had one of these…years…does anybody remember the Boston Crème Donuts at Presti’s (anybody from ye olde alma mater of CIM, that is)?  

Damn.  Now I really want a doughnut!  Unfortunately I didn’t buy any at the store.  Guess it’ll have to wait.

OMG Cake

My friend Laura is a fantastic cook and we were lucky to get invited over to her house last night for dinner.  She made salad, salmon, couscous, and a Bailey’s Chocolate Cake.  OMG.  So good. (and now OMG is totally in the dictionary, so…)

Oh, and here’s another picture from the weekend.  Saturday night (after a four hour nap, trying to recover from the half-marathon I ran) we went to the Chamber Project St Louis concert at the Chapel.  It was snowing by then, so the boys had a little snowball fight.

After the concert (which was fantastic, though sparsely attended, most likely due to the snow) we hit up the Fountain on Locust where I had a “grasshopper” which was a minty ice cream martini, and a spinach salad…yum! 

Overall it was a great weekend!  (Yes, I’m aware it’s Monday night, not Sunday night…)

Shrimp n’ grits

I had grits leftover from the other weekend, and as I am such a southern girl, I wanted to have them again as soon as possible.  So, I made Shrimp n’ grits!

I loosely followed this recipe.  Ever since purchasing my cast-iron frying pan the other month, I’ve been trying to use it as often as it makes sense.  This was a great time to use it!  The changes I made to the recipe:  I made more grits than suggested because I was also making more shrimp.  I used turkey bacon rather than regular bacon, and I added spinach to the crumbled bacon/green onion mixture at the end.  The whole thing turned out really well.

Today is a very windy day—windy, warm, and full of pollen.  I wanted to do a six mile run, but I was struggling too much and had to cut it short at 4 miles.  I was annoyed.  Guess I need to purchase some antihistamines.

I am at 74 miles!  I will get there.  Even with the pollen (I hope.)

So today I’m being a girl and am going shopping instead of attending the Rebecca Skloot Lecture.  Oops. 

And I haven’t started on the taxes yet…though that is actually Charter’s fault (cable company) as I spent 1 hour yesterday dealing with the slow internet and attempting to talk to somebody on the phone who could help me rather than starting on the taxes.  Seriously—they spent 20 minutes telling me it was my computer’s fault the internet was slow.  Finally they noticed that there were reports of outages in my area.  GAH.  I hate the cable company, and I think it might be time to change to another internet service provider.  In any case, after all of that I was out of time for doing taxes on that day.  Today I slept in rather than start.  I looked at the calendar and decided there is more than enough time left, in any case, EVEN assuming that much of that time will be spent yelling at Charter on the phone.

All right.  Time to make sure there is nothing super-pressing on my to do list, and then it’s shopping time!  (For a friend, not me, I plomise!)
